Asparagus and Goat Cheese Frittata

 

It’s snowing…again. So far we have had 15 inches in 2 days. What is the best part you ask? They are saying this is just an “appetizer” for what is to come…yay winter!

Okay, now that I got that off my chest, let’s get back to something fun…Valentine’s Day! Today we are talking about breakfast in bed. I don’t know about you, but waking up to a warm delicious meal would not be the worst thing in the world. Eating food without having to even get out of bed…perfect.

This frittata is so simple, it would make the perfect surprise for your valentine. It cooks in less then 30 minutes and is packed full of flavorful goodness. Give it a try…you will be a Valentine’s Day hero!

Local Ingredient: Organic Goat Cheese (purchased from a local farm store).

  • Saute the asparagus and onions in a large skillet over medium heat.
  • Add the eggs to a large mixing bowl.
  • Whisk in the milk and season with salt and pepper.
  • Add the eggs to the skillet and cook for 2 minutes. Remove from heat.
  • Add chunks of the goat cheese, distributing evenly. Bake at 400 degrees F for 10-15 minutes, until the center is firm.

Asparagus and Goat Cheese Frittata

Prep Time: 5 minutes

Cook Time: 20 minutes

Serving Size: 4-6

Ingredients

2 tablespoons olive oil

1/2 onion, sliced

1/2 bunch asparagus, cut in halves

8 eggs, preferably farm fresh

3/4 cup local organic milk

Sea salt, to taste

Fresh ground black pepper, to taste

2-3 oz organic goat cheese, preferably locally sourced

Instructions

  1. Preheat oven to 400 degrees F.
  2. Add the olive oil to a large oven proof skillet over medium high heat.
  3. Add the onions and asparagus and saute until soft, about 4 minutes.
  4. In a large bowl whisk together the eggs and milk. Season with salt and pepper.
  5. Add egg mixture to the skillet and cook for 2 minutes. Remove from heat.
  6. Add chunk of goat cheese to the skillet, spreading it around evenly.
  7. Place the skillet with egg mixture in the oven. Bake for 10 to 14 minutes at 400 degrees F, until the center is set.
