I usually do a food gift for the neighbors and friends in town. In the past I’ve made candied pecans. But, this year I did a cleaned up version of the “nut” gift. Pancakes are a weekend ritual at our house. My daughter and I love to cook together and pancakes are the perfect recipe for little hands to help with. I was first introduced to the ginger, honey and carrot combo in college. When my folks would come up for football games they would stay outside town at this little bed and breakfast. They also served dinner on Friday nights. One Friday night, they served a variation on these carrots. It became a family favorite.
