Rosemary Chipotle Roasted Almonds
I usually do a food gift for the neighbors and friends in town. In the past I’ve made candied pecans. But, this year I did a cleaned up version of the “nut” gift. The rosemary and chipotle flavors marry so well with the maple syrup. These almonds are so yummy, I had to force myself to stop eating them so I had enough to package up for gifts. I’ll be making a few more clean eating food gifts this week.

I am a pesto addict. I think it might be the perfect sauce. it has everything a great sauce should…nuts, cheese, herbs, and pretty colors. For the longest time I only ever made traditional pesto, but recently I have decided to branch out! Here is one of my newest addictions…Spinach Pesto! It is delicious! Pancakes are a weekend ritual at our house. My daughter and I love to cook together and pancakes are the perfect recipe for little hands to help with. She puts on her apron and gets up on her cooking stool. Her favorite part is mashing the bananas for me. We’ve been taste testing a whole wheat oatmeal pancake recipe for weeks now and finally perfected it this weekend. My daughter loved them, in fact, she ate 4 pancakes throughout the morning. That’s a lot for a little tummy.

Honey Ginger Carrots
I was first introduced to the ginger, honey and carrot combo in college. When my folks would come up for football games they would stay outside town at this little bed and breakfast. They also served dinner on Friday nights. One Friday night, they served a variation on these carrots. It became a family favorite. They sold us this Junior League cookbook, where the owner had gotten the recipe. I have no idea where that cookbook ended up through the years but I have continued to cook these carrots. The recipes have changed and morphed over the years into what it is today. And, its delicious

I love this stuff. It is so easy to make and people love it! The very first time I made this recipe I brought it over to a friends house for a picnic. Before the day was over I had 5 people ask me for the recipe. The avocado is so creamy that you don’t even miss the mayo in traditional chicken salad. And bonus…unlike mayo you don’t have to worry about it spoiling on a hot day!
