The hubby loves all things seafood. So for his Valentine’s Day gift this year I decided to make him a delicious meal of mussels. I don’t have a lot of experience with them so I tested the recipe a few times before perfecting it enough to serve. From the research I did, mussels are complete…

Chocolate Covered Strawberries

February 7, 2014 by Sara 2 Comments

I was looking for something fun for Valentine’s Day this year. Because let’s face it, once you have kids, its no longer just about you and your sweetie. My daughter loves chocolate and strawberries, so I thought it was the perfect kitchen activities for us. But, as I was making these I kept thinking how fun it would be to make this with my hubby. I mean I had chocolate ALL over. It would have been fun to have someone there to help me lick it off. (Ha, sorry trying to get in the spirit of Valentine’s Day, and after 7 years of marriage you have to take what you can get.)

Clean Eating Chocolate Fondue

December 29, 2013 by Sara 1 Comment

The chocolate fondue is as simple as melting some chocolate. We use our sterno (non-electric) fondue pot for the chocolate. It mimics a double boiler. The chocolate can be done in either. If you don’t have two fondue pots or don’t want to clean the one you use for the main course, simply melt…

Spicy Chipotle Bean Dip

December 28, 2013 by Jessica 3 Comments

Since New Year’s Eve is all about parties, I thought I would show give you an easy and delicious party dip. And I mean….who doesn’t love dip? It really is the perfect party food. It is easy to eat, fun, and great for a crowd. Here is a simple and quick version of white bean dip. This bean dip gets a Southwest twist with the addition of chipotle peppers, chili powder, and even a pinch of cayenne. It is easy to make and ready in less than 10 minutes. I soaked and cooked the white bean myself, but if you prefer you could use a low sodium canned variety. I also toasted a little whole wheat bread to serve the dip, but tortilla chips or pits would work great also!

Heirloom Yellow Eyed Peas – A “New” New Year’s Day Tradition

December 27, 2013 by Sara 2 Comments

The last few years my family has started out the new year by eating black eyed peas. I found these beautiful yellow eyed peas at the farm market. The owner says they are in the same family but have a smoother taste and greater depth of flavor. They are considered an heirloom bean. You may know that black eyed peas are often served on New Year’s Day because its thought they bring good luck. However, yellow eyed peas are thought to bring not just luck, but luck in the form of GOLD. So, I am going with it! ‘Cause I could really use some gold right about now!
