Green Olive Hummus

Green Olive Hummus SO Yummy Clean Eating is Awesome!

I didn’t realize how much I loved green olives until I made this hummus. Mario Specialty Food sent us some olives and asked us to help them create some healthy recipes. Originally I thought I’d make a tapinade, but decided to go with a hummus instead. I’m so glad I did. The green olives simply extend the olive oil flavor in the hummus and it so so yummy.

We have started making hummus at our house instead of buying it. The 4 year old loves hummus and that makes me happy. But, looking at the labels of the hummus containers at the store, I knew I could clean it up and make it even better for us. Even if you use canned chickpeas, its still better for you than buying pre-made hummus. Plus you can add any flavors you want. I made this one, Green Olive Hummus, for some girlfriends last weekend and it was a HIT. Everyone loved it.

    Just a few simple ingredients.
  • Blend in Food Processor or Blender

Local ingredient: garlic purchased from our winter’s farm market.

Green Olive Hummus

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 2 1/2 cups Green Olive Hummus

Green Olive Hummus

Ingredients

2 cans Organic Chickpeas (drained and rinsed) or 16 oz fresh chickpeas,soaked, drained and rinsed

1/2 cups Mario Green Olives, pitted

6 Garlic Cloves

1/4 cup Extra Virgin Olive Oil

Juice from 1 Lemon

Salt and Pepper to taste (I didn't add any but you could if you wanted to)

Smoked Paprika, to garnish (optional)

3 Green Olives, diced, to garnish (optional)

1 teaspoon Olive Oil, to garnish (optional)

Instructions

  1. Add the chickpeas, olives, garlic, and lemon juice to the food processor or blender.
  2. Turn it on and slowly stream in the olive oil into the feeder tube.
  3. Remove lid and add salt and pepper, if using
  4. Turn food processor on for another 3-4 minutes until hummus is creamy
  5. Garnish with smoked paprika, diced olives and olive oil.
  6. Serve with carrots, cherry tomatoes, or soft whole wheat pita or lavash bread.

    Delicious! I made this tonight, I did it with roast garlic and half regular chick peas and half green garbonzo peas. My kids don’t like olives but boy boy I had a hard time putting this away! I love that you don’t need Tahini! Thanks for posting.
