I love grilled pineapple. One of my favorite things about summer is all the pineapple! Mix it with pork tenderloin, and its so good.I always see the premade kabobs at the store and wonder how good they are and I make my own from time to time. But, I always opt for boring chicken, sometimes beef. I’ve never tried it with pork before. We grill pork tenderloin a lot, so I knew this would be good. I wanted to find a glaze that is tangy and a little sweet. This one is great. I made it up a while back when grilling a pork tenderloin. It was super tasty on the veggies too. You can omit the bourbon if you’d and just up the apple cider vinegar. We tried it both ways. My hubby is a bourbon drinker, and loved the bourbon version.
This is the perfect Memorial Day grilling recipe. It’s colorful, fun and has a little something for everyone. I’ve grilled sweet potatoes before, but never this way. The caramelization on them is a treat I didn’t expect. So, fire up that grill and enjoy these delicious Pork kabobs. You won’t be disappointed. I served this with a fresh pineapple lime brown rice. It was super tasty too. I’ll post that recipes some time soon. I just made it up yesterday, so I want to tests it out a few more time before I share it.
Local Ingredient: Local honey
Ingredients
2 medium sized pork tenderloins, cut into large chunks
1/2 cup bourbon (You can omit to bourbon and just double the apple cider vinegar)
1/2 cup local honey
3 sprigs fresh thyme, stems discarded
2-3 tbls dijon mustard
2 tbls apple cider vinegar
2 sweet potatoes, cut into chunks and parboiled (leave the skins on)
1 red bell pepper, cut into large chunks
1 green bell pepper, cut into large chunks
2 red onions, cut into large chunks
1 pineapple, cut into large chunks

Instructions
- Mix together the bourbon, local honey, thyme, mustard and apple cider vinegar. Place prepared pork into the mixture and allow to sit and marinate for at least 30 minutes. Reserve mixture.
- If using wood sticks, soak them in water for about 10 minutes.
- Assemble the kabobs adding evenly the meat, peppers, onions, sweet potatoes, and pineapple. Pour the reserved mixture over the kabobs.
- Spray the grill or grill pan with cooking oil (Olive or grape seed oil) and then grill the kabobs over medium heat until the pork is cooked through. Pork should be at least 145 degrees.
