Overnight Refrigerator Oatmeal!!!

This week Sara and I are back together in Virginia working on a project. It is always nice when we can get together, talk about food and try out new recipes. The recipe today is a result of a long running curiosity I have had with the idea of overnight oatmeal. Pinterest is full of delicious looking refrigerator oatmeal recipes. I know I am a little slow to jump on this trend, but I just hadn’t gotten around to trying it until now.

Since we like to experiment when we are together, Sara and I thought we would give this overnight oatmeal thing a try. We wanted to come up with a recipe that was both simple and could also be made with ingredients you might have around the house. We did throw some chia seeds in there, which gives it a great texture, but you could leave them out if you dont have and/or like them. I think we’ll be experimenting a little more with chia seeds. Maybe a pudding? So, be on the lookout for that soon.

For us, breakfast can be the most challenging part of clean eating. It’s so easy to grab a bagel or sugary cereal in the morning, especially when you’re starving. So we are psyched to that this oatmeal was so delicious and so easy.

 Local Ingredient: Local Clover Honey (Purchased from the farmers market).

Overnight Refrigerator Oatmeal

Prep Time: 10 minutes

Cook Time: 8 hours

Total Time: 8 hours, 10 minutes

Serving Size: 4 servings

Ingredients

1 cup rolled oats

1 1/3 cups milk

1 cup Greek yogurt

4 tsp chia seeds

1 tsp vanilla extract

4 tsp honey

2 bananas, cut into chunks

Instructions

  1. In a large mason jar combine the rolled oats, milk, Greek yogurt, chia seeds, vanilla extract, and honey. Close with a tight fitting lid and shake the jar until all the contents are well combined.
  2. Stir in the banana chunks.
  3. Screw the lid back on tightly. Place in the refrigerator overnight, or for at least 8 hours before serving. The oatmeal can be kept in the refrigerator for up to 3 days.

    I am a huge oatmeal fan but I’ve never tried overnight oats. Now that it’s warming up I tend to favor things like smoothies and homemade granola for breakfast but this seems like an easy way to keep eating my oats even when I don’t want something warm for breakfast! Thanks for sharing 🙂
