I don’t know about you but I am a salad addict. Is that even possible? Well if it is, I am one. They are a fast, easy, and delicious way to eat your vegetables. Oh and did I mention they were delicious.
Salads…Delicious…are you crazy? It’s rabbit food! You might be tuning out right now…but hear me out. I am not talking about boring iceberg lettuce salads with some bottled white nondescript dressing on them. No. I am talking about beautiful, flavorful, zesty salads. Ones with delicious homemade dressings. Salads that are so full of color and flavor they are pleasing to both the eyes and the pallet! Am I getting too poetic for you? Sorry. I just can’t help myself sometimes… I am a total food lover nerd.
Local Ingredient: Tomatoes (purchased from the local farmers market)
Ingredients
¼ cup balsamic vinegar
1 Tbsp chopped garlic
½ tsp salt
½ tsp black pepper freshly ground
¾ cup extra-virgin olive oil
1 Head of Romaine Lettuce, cleaned, root removed, and chopped
2 Tomatoes, cut into quarters or 1 cup of cherry tomatoes, halved
2 carrots, diced or peeled into strings
3 baby radishes, sliced
1 cucumber, sliced
Instructions
- Simple whisk together the ingredients
- Mix together all the ingredients into a bowl.
- Serve in 4 equal portions.
- Drizzle with 1 tablespoon of the vinaigrette.
