Butternut Squash Bread

So I have to admit I got addicted to that show True Detective. Mathew McConaughey and Woody Harrelson chasing a serial killer in the coastal area of South Louisiana…great! While the show is great, I have to say my favorite part is the locations they use for filming. They are so visually dramatic, so isolated…so green. Maybe it is the green I like. I miss green. My backyard still has white in it. The green, or I should say brown, is starting to peak through…but alas there is still white.

On a different topic I am starting to believe that butternut squash is one of those foods that can be made into anything. Sort of like coconut. While wasting time doing recipe research on Pinterest the other day I stumbled upon a picture of butternut squash bread. I was like WHAT? How did I not know about this??? I guess it makes total sense. If you can turn pumpkin into bread why not butternut squash? I love bread…I love butternut squash…why had this never occurred to me!

So here it is, my recipe for butternut squash bread. It it insanely easy to make, you don’t even need an electric mixer. And it is so good. A great alternative for when you just can’t take one more bite of pumpkin anything. You know what I am talking about…

Local Ingredient: Local Organic Honey (purchased from Nature’s Way health food store). 

Butternut Squash Bread

Ingredients

1 1/2 cups whole wheat pastry flour

1 tsp nutmeg

1 1/2 tsp cinnamon

1 tsp baking soda

1/4 tsp baking powder

1/2 tsp salt

2 eggs

1/2 cup coconut oil (liquid)

1/2 cup local honey

1 tsp vanilla

1 cup butternut squash puree

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl use a whisk to mix together the whole wheat pastry flour, nutmeg, cinnamon, baking soda, baking powder, and salt.
  3. Add the eggs, coconut oil, vanilla, and honey. Mix together with a wooden spoon, until well incorporated but being careful not to over mix. Gently stir in the butternut squash puree.
  4. Pour the batter into a loaf pan.
  5. Bake at 350 degrees F for 30-40 minutes, until a toothpick comes out of the center clean.
  6. Remove from the loaf pan and allow to cool on a wire rack.

  • Made this, very nice, I replaced oil with apple sauce as I'm cutting calories, also used 1/4 cup of honey and 2 tbs of natural sugar substitute. Will make again. The apple loaf is my favourite so far
