I am always searching for new and tasty things to make for lunch. I pack my daughter a lunch for school and often feel like I get in a rut with ingredients. She loves anything in a tortilla. Whole wheat tortillas have such a great flavor. We have grown to love them even more than the traditional ones. So I’ve been trying to find new things to wrap! This is one of my first tries. It’s a BLT Chicken wrap, because who doesn’t love bacon? I make the spinach pesto on Sunday so I can use it for wraps and sauces later in the week. For our spinach pesto recipe, click here. It’s very versatile and simple to make. I also make the bacon and chicken breast ahead of time so I can just throw this wrap together in the morning.
This BLT has become a lunchtime favorite. It has a fresh flavor but doesn’t leave you feeling hungry. The whole wheat wrap and chicken give us the energy we need to make it through the rest of the day.
Local Ingredient: Chicken purchased at a local farm.
Ingredients
2 boneless skinless Chicken Breasts, cooked
8 slices Turkey Bacon, cooked
1 Tomato, sliced
8 Romaine Lettuce Leaves
Spinach Pesto (about 2 tablespoons)
4 Whole Wheat Tortillas
Instructions
- Cut the chicken breasts into strips.
- Spread the 1/2 tablespoon of pesto on each tortilla.
- Evenly divide the chicken in to four portions and add it to each tortilla.
- Add the tomato and 2 romaine lettuce leaves to each tortilla.
- Fold each side of the tortilla one at a time to create a burrito like wrap. Cut down the middle and serve.
