Not Your Grandma’s Brownies

Secretly, we were so incredibly skeptical of these brownies. We bought a 100% cacao dark chocolate bar and felt so good for being “clean.” Then we both took a bite….OH MY. Bleh. It was terrible. So, we decided to cut it with an organic 60% cacao chocolate bar. You still get all the benefits and yummy flavor of the dark chocolate without the bitterness of the 100%. We also used a 100% completely clean cacao baking powder. The honey and almond butter do a great job naturally sweetening up these suckers. In the end, the batter looks exactly like boxed brownies. And, the finished product – that too!

These delicious brownies are gluten free and so easy to make. They have a “fudgy” texture that make them a favorite of kids and parents! This yummy recipe is from our Paleo Kids Cookbook.

Not Your Grandma’s Brownies

Cook Time: 40 minutes

Serving Size: 4-6

Ingredients

1 1/2 oz 100% dark chocolate

1 1/2 oz 60% dark chocolate

1/2 cup coconut oil

3 free range organic eggs

1/4 cup almond butter

1/2 cup honey

1 teaspoon vanilla extract

3/4 cup cocoa powder

1/2 teaspoon sea salt

1/2 cup dark chocolate, roughly chopped

1/2 cup almonds, optional

1/2 cup toasted coconut, optional

Instructions

  1. Preheat over to 350 degrees F.
  2. Grease a 8x8 baking dish with coconut oil
  3. Melt the 1 1/2 oz of 100% dark chocolate, 1 1/2 oz 60% dark chocolate and the coconut oil together in a double boiler.
  4. Once the chocolate and coconut oil have melted, stir until well blended. Then remove from heat and let cool for 5-10 minutes.
  5. Whisk in the eggs individually, waiting for each to completely combine before adding the next.
  6. Whisk in the honey, almond butter, salt, and vanilla.
  7. Stir in the cocoa powder, chocolate pieces, almonds and toasted coconut.
  8. Pout batter into the baking dish. bake 25-30 minutes. Brownies will be done when a toothpick comes out clean.
  9. Let brownies cool before slicing.
