Peanut Butter Bacon Stuffed Dates

Well, for all of us here in South Western CT the blizzard of 2015 was a bust. Instead of dumping 2-3 feet of devastating snow, Juno left us with a pretty 10-12 inches, which in my book is the perfect amount of snow. It is enough to coat everything in a beautiful fluffy layer of white without trapping you in your house for a week without power.

Now that I made it through the Snowpocalypse, it is time to set my sights on the upcoming food holiday…err I mean football game…The Super Bowl!!!

Oh The Super Bowl, is there any better eating holiday? I mean yes, obviously Thanksgiving is a great food Holiday, but it is all so proper…a formal table setting that you have been stressing and slaving over for a week. The Super Bowl on the other hand is all about getting down with some good old fashioned junk food. It is really the king of all junk food eat-a-thons and therefore it will always hold a special place in my heart.

I started working on this recipe during my first Whole 30. I found that almond butter stuffed dates were the perfect snack and a great way to satisfy my sugar cravings. After a while I began to wonder if there was a way to combine my new favorite treat with the classic bacon wrapped dates I have always loved. I experimented with stuffing the date with peanut butter and then wrapping them in bacon and baking, but that turned out to be quite the mess. I think this is the best compromise. You get the great smoky bacon flavor, the sweetness of the dates and the creaminess of the peanut butter. Eating Paleo? Try it with almond butter instead. It is just as tasty and Whole 30 compliant!

Peanut Butter Bacon Stuffed Dates

Yield: 12 dates

Ingredients

12 merdjol dates

6 strips bacon, cooked

1/3 cup peanut butter (or almond butter for Paleo and Whole 30)

Instructions

  1. Cut a slit in the dates lengthwise. Remove the pits.
  2. Crumble or chop the bacon into small bits.
  3. Stuff the dates with the peanut butter, being sure to divide evenly among the 12.
  4. Sprinkle the dates with the crumbled bacon, pressing it down into the peanut butter to make it stick if necessary.
