This week Sara is on vacation in Florida, which means I am all alone. When you work from home and your only coworker goes on vacation you realize what little contact you actually have with the outside world. Most of the day it is just me and the dogs…all alone. Don’t feel bad for me….the dogs and I have a great time. And while I may talk to them a little too often (don’t judge) we still enjoy our day. If anyone of you work from home you can probably relate to this.
Oh here is another work from home gripe. I don’t know if anyone out there works from home and has dogs, but mine are total traitors. I am with them all day, feeding them, playing with them, taking them for walks…but when my boyfriend gets home from work…I cease to exist. He is the most important and exciting person to them. I mean WTH…who fed you this morning guys?!?! I did! Like I said….traitors.
Okay enough of my work from home venting (the grass is always greener right?) lets get to the food….that is what you really care about anyway. Lately I have developed a bit of an avocado addition. I have half an avocado every morning with an egg for breakfast. Have you tried this yet? Add a piece of whole wheat toast and I promise you will be in heaven. So given my avocado addiction I have been cooking with it a lot. Sorry if you don’t like avocado…but really you should. While I do love using avocado in other types of recipes sometimes classics are a classic for a reason. Guacamole is one of those classics. So I made you my favorite guacamole! It was inspired by a version I had at a restaurant. This guacamole has a great smoky element, which adds amazing depth of flavor. Give it a try, it is sure to turn you into an avocado addict as well!!!
Local Ingredient: Local pasture raised bacon and fresh cilantro from my garden.
Ingredients
2 large avocados
1 ear of corn, roasted (or cooked), kernels removed
1/4 cup bacon, cooked and chopped, plus more for garnish
1/4 onion, finely diced
1 jalapeno, seeds removed and diced
1 tbsp fresh cilantro, chopped
juice of 2 large limes
salt, to taste
black pepper, to taste
Instructions
- Remove the avocados from their shell and remove the pit. Place the avocado in a large bowl and mash until it becomes the desired creamy consistency.
- Stir in the corn kernels, bacon, onion, jalapeno and cilantro. Mix until all ingredients are well incorporated.
- Squeeze in the fresh lime juice and mix until well incorporated into the guacamole. Season with salt and pepper to taste.
- Garnish with the rest of the bacon and serve.
