Breakfast: Turkey Bacon Breakfast Muffins

Lunch: Tomato Mozzarella and Bacon Pitas, Cucumber and Tomato Salad

Snack: Trail Mix

Dinner: Chicken Lettuce Wraps

 

This salad is simple, quick, and delicious. Full of fresh ingredients, this beautiful salad makes a great side for any meal or an easy and light lunch.

 Local Ingredients: Cucumber (purchased from local farmer’s market), Tomatoes (purchased from local farmers market)

Tomato and Cucumber Salad

Ingredients

1 large cucumber

1 cup cherry tomatoes, halved

1/3 onion, finely diced

4 tbsp balsamic vinegar

salt, to taste

Instructions

  1. Combine all the ingredients in a large bowl. Mix well.
  2. Season with salt to taste.
