Breakfast: Turkey Bacon Egg Muffins

Lunch: Whole Wheat BLT Pitas, Cucumber and Tomato Salad

Snack: Trail Mix

Dinner: Chicken and Mushroom Lettuce Wraps

Breakfast: Whole Wheat Oatmeal Banana Pancakes

Lunch: Hummus with Pita and Carrot, Celery, and Green Pepper Sticks

Snack: Trail Mix

Dinner: Maple Bacon Cheddar Turkey Burgers, Sweet Potato Fries

 

 

Snack time can be a challenge for the clean eater. It is the middle of the day, dinner is still a couple of hours away, and you feel your energy starting to fade. Even worse…it seems like unhealthy shack options are coming at you from every direction! The vending machine in the break room…the muffin at the coffee shop…that gas station you just drove by. It is almost too much! You are so hungry…

We have all been there. And lets be honest…it sucks. Being caught out of the house without a healthy real food snack can put you in a terrible position. Do you let yourself go hungry? Or do you break down and eat something processed from a bag?

Here is a simple and delicious clean eating snack option that you can take with you, to make sure you never have to break down and brag that vending machine food again!

Trail Mix

Ingredients

1 cup Unsalted Almond Slices

1 cup Sunflower Seeds

½ cup Shredded Coconut

½ cup Dried Cranberries

¼ cup Raisins

¼ cup Dark Chocolate Chips or Chunks

Instructions

  1. Preheat the oven to 325 degrees F.
  2. Spread the shredded coconut on a baking sheet in one even layer. Put it in the oven and toast until it becomes a beautiful caramel color. About 15 minutes.
  3. Remove the coconut and allow to cool completely.
  4. Mix all ingredients together in a bowl and combine.
  5. Store in an airtight container.
