Butternut Squash Fries

I love fries.

I guess that is not that uncommon a statement. I mean…who doesn’t like fries? They are salty, crispy little strips of deliciousness. Mmmm fries.

When I want to make fries at home I like to get creative. While I will always hold a special place in my heart for the traditional french fry, unfortunately they are not something you should eat everyday. I am sorry…you just shouldn’t.

That is the beauty of butternut squash fries. You could eat them everyday. No really, it’s true! They might be the most perfect fry vegetable. They have a great natural sweetness and you don’t even need oil to make them. You have to cut them in strips and bake! What could be easier!

Local Ingredient: Organic butternut squash (purchased from a local farm store).

  • Use a medium sized butternut squash.
  • Peel the squash.
  • Cut into fry shape pieces and place on a baking sheet.

Butternut Squash Fries

Ingredients

1 medium sized butternut squash

Sea salt, to taste

Fresh ground black pepper, to taste

Instructions

  1. Preheat oven to 425 degrees.
  2. Use a vegetable peeler to peel the entire butternut squash.
  3. Once peeled, use a sharp knife to cut the squash into french fry shape pieces. Be careful not to cut the pieces to thin, fat thick fries tend to work best.
  4. Lay the fries out flat n a baking sheet, being sure that the pieces do not overlap.
  5. Bake at 425 degrees F for 20 minutes. Remove the fries from the oven and flip the over. Place back in the oven and bake for and additional 20 minutes.
  6. Season with salt and pepper and serve warm.
