Dinner: Turkey Meatloaf, Whipped Cauliflower

 

Is it just me or is Cauliflower one of the most versatile vegetable our there? You can make it into rice, pasta sauce, pizza crust, popcorn, and tortillas. You can roast it, boil it, and steam it. Even better…you can use it to make a healthy version of mashed potatoes! This whipped cauliflower recipe is so creamy and light that your family won’t know they aren’t eating the real thing. Shh don’t tell my 4 year old!

 

Whipped Cauliflower

Serving Size: 4

Ingredients

1 large head Organic Cauliflower, stems removed and chopped

½ cup Chicken Broth

3 tablespoons Butter

Salt and Pepper, to Taste.

Instructions

  1. Place the chopped cauliflower into a medium to large sauce pan. Fill the pan ¾ full with water.
  2. Bring the cauliflower to boil. Allow to boil 10-12 minutes, until the cauliflower is fork tender.
  3. Drain the cauliflower.
  4. Add cauliflower to food processor or blender. Add the chicken broth, butter and salt and pepper.
  5. Blend until cauliflower is smooth and has a creamy mashed potato consistency.
  6. Serve hot.
