Breakfast: Cinnamon Raisin Oatmeal

Lunch: Leftover Meatloaf Sandwiches

Snack: Ants on a Log

Dinner: Taco Tuesday, Mexican Bean Salad

Do you remember having this snack when you were a kid? I do. I loved it. It got me to eat celery. I never ate celery. Why is it that if you put something on a piece of celery kids no longer think it is a vegetable? I don’t know why, but it worked for me. So in remembrance of my childhood I decided to do a clean eating version of this childhood favorite. Okay I will admit it is already pretty clean. I mean it is only 3 ingredients and the serving vessel is a plant. But I did switch out the peanut butter for almond butter. Mmmmmmm almond butter. Totally addicted to that stuff.

Ants on a Log

Ingredients

4 Stalks Organic Celery

½ cup Almond Butter

¼ cup Organic Raisins

Instructions

  1. Trim the celery removing the bottom and top of the stalk. Then cut it in half creating 8 celery sticks.
  2. Spread the almond butter evenly in to each celery stick.
  3. Place raisins on top of the almond butter like ants sitting on a log.
