Cilantro Lime Quinoa!!!!

Okay, while I have to admit that winter was fun. I am very much ready for spring. Especially when it comes to food. I am getting sick of soups, hearty casseroles, and anything squash flavored. I want something light, fresh and exciting.

I suppose it is my longing for spring and everything it brings that inspired me to make this quinoa. It is such a simple side dish and it instantly transports you to somewhere warm. Most likely sitting by the water surrounded by palm trees, eating fresh fish or spicy grilled meat. Can you tell I need a vacation?

I don’t know about you, but I love cilantro lime rice. I wanted to make a clean eating version with quinoa. But…I wanted to try something new. So with this dish I added a little coconut oil…WOW. It adds such a wonderful flavor. Wen using coconut oil make sure to use one that is high quality. For this recipe I used Tropical Traditions Virgin Coconut Oil. I love this company. They offer a wide range of great products that I use all the time. My favorite is probably this coconut oil. It is easy to cook with and I find it adds a great depth of flavor to my dishes. In this case, it really made this quinoa something special.

 Local Ingredient: Organic Garlic (purchased from a local food delivery company).

  • Boil the quinoa.
  • Chop the garlic and cilantro. Juice and zest the lime.
  • Mix all the ingredients together in a large bowl.
  • Enjoy!

Cilantro Lime Quinoa

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Cilantro Lime Quinoa

Ingredients

2 cups water

1 cup organic quinoa

1 tbsp coconut oil

1 lime, juice and zest

1/3 cup chopped cilantro

2 cloves garlic, minced

Sea salt, to taste

Instructions

  1. Bring 2 cups of water to a boil in a medium sauce pot.
  2. Add the quinoa. Reduce heat and simmer until water is absorbed and quinoa is tender. Remove from heat. Allow to sit for 5 minutes. Fluff with a fork.
  3. In a medium mixing bowl add the quinoa, coconut oil, lime juice, lime zest, cilantro, and garlic. Mix until well combined. Season with salt to taste and serve.
