Spinach and Goat Cheese Quinoa Cakes by MyCleanKitchen.com

By the time I got to my friends house I was craving some warm delicious comfort food. I wanted something hearty, filling, and it definitely had to have cheese. After some deliberation I decided to make these spinach and goat cheese quinoa cakes. They were easy, fast, and exactly what I needed.

Honey Ginger Carrots

October 15, 2013 by Sara Leave a Comment

I was first introduced to the ginger, honey and carrot combo in college. When my folks would come up for football games they would stay outside town at this little bed and breakfast. They also served dinner on Friday nights. One Friday night, they served a variation on these carrots. It became a family favorite. They sold us this Junior League cookbook, where the owner had gotten the recipe. I have no idea where that cookbook ended up through the years but I have continued to cook these carrots. The recipes have changed and morphed over the years into what it is today. And, its delicious

Now that I have tried these fries I will never go back to the traditional white potato kind!

Balsamic Roasted Brussels Sprouts

October 15, 2013 by Jessica 2 Comments

Remember when you were a kid and you thought Brussel Sprouts were gross? I wonder…did we ever even try them or were we just so pre-programmed to think that way that we just came to believe they were disgusting without even taking a bite? Poor Burssel Sprouts…they never even stood a chance…not with the legions of hating kids and skeptical adults. I think we should all take a stand and change this tragic tide of Brussel Sprout hating! They are delicious! I am talking to you now as a recovering Brussel Sprout hater. Yes…I will admit it. I too once prejudged this poor misunderstood vegetable. But not anymore!

Chicken and Mushroom Lettuce Wraps

October 14, 2013 by afpadmin 6 Comments

I have been craving lettuce wraps, specifically the popular appetizer from a big chain restaurant. Alas, we don’t have many chain restaurants around our area which makes going to one a treat. I know its kind of the reverse of normal people. However, it does come in handy when implementing a “clean” diet. Anyhow, I decided to make up my own lettuce wrap recipe. My daughter’s first word when she took a bite was “yummy!”
