If you are like me you are ready for Spring. And even though Mother Nature has decided not to cooperate…I am going to pretend it is Spring anyway. In honor of my own personal Spring, I wanted to make something that reminded me of grilling out. How nice would it be to grill out right now? Maybe I will…oh wait we are getting a blizzard…that’s right. Okay so I am going back to pretending it is Spring.
Since I am not grilling out in the snow, I decided to roast some chicken drumsticks instead. I used a recipe I have been working on for a while. About a month ago I received an obscene amount of local garlic in my winter Harvest Box. I like garlic and all…but this was A LOT. Once I realized I was not gonna be able to cook with all of it, I decided to roast a bunch of heads and use it for cooking. Check out our recipe for roasted garlic here. One of the things I did with my roasted garlic was to create a rub for chicken. I combined it with some honey and butter and slathered it on some chicken drumsticks. Wow, is that good. Like really good. And since I am pretending it is Spring I thought I would throw in a little chili powder to give it some kick. If I close my eyes I can almost pretend I am sitting outside in the sun. Almost….
This is a very easy recipe and it will give you delicious, moist, crispy chicken every time. I like to serve the chicken with some roasted vegetables of whipped cauliflower. Give it a try, you won’t be disappointed!

Local Ingredient: Local Honey and Local Pasture Raised Chicken Drumsticks (both purchased from a company that delivers local food).
Ingredients
6 chicken drumsticks, pasture raised
4 tbsp grass-fed butter, softened
1 tbsp chili powder
1 head roasted garlic
¼ cup honey
Sea salt, to taste
Black pepper, to taste
Instructions
- Preheat oven to 425 degrees F.
- In a small bowl mix together the butter, roasted garlic, and chili powder. Use a fork to blend the ingredients together. Once they ingredients are well mixed, stir in the honey.
- Place the drumsticks in a roasting pan or baking dish, whichever you prefer. Rub the honey butter mixture on the drumsticks, making sure to cover the tops, bottoms, and sides, as well as under the skin. Season with salt and pepper, to taste.
- Bake at 425 degrees F for 30-45 minutes, until the chicken reaches an internal temperature of 165 degrees F.
Notes
If the chicken begins to brown too quickly, cover with aluminum foil.
