As a clean eating food blogger, I am frequently asked what do I consider the hardest part of clean eating? While my first reaction is to say all the dishes you have to wash (the sad truth is when you cook you have a lot more dishes then when you go out to eat…sorry guys), the truth is…the hardest part for me is finding delicious clean eating snacks.
Since finding interesting and delicious clean eating snacks can be a problem sometimes, I wanted to create a recipe that would be inexpensive, simple, and satisfying. The result…Spicy Honey Roasted Chickpeas! They are simple to make. Just combine a bunch of spices you probably already have in your cabinet, add the chickpeas and stir. Toss them in the oven for about 30 minutes and you are good to go! They have just enough heat to get your attention without burning your taste buds off. But I will warn you…be careful…these little guys are addictive!
Local Ingredient: Local Honey (purchased from a local health food store)
Ingredients
1 (15 oz) can of chickpeas, rinsed and dried
1/2 teaspoon Mexican chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon cayenne pepper
1 pinch ground nutmeg
1 teaspoon honey
1 1/2 teaspoon olive oil
Instructions
- Preheat oven to 400 degrees F
- In a small bowl combine the Mexican chili powder, smoked paprika, ground cumin, salt, ground mustard, cayenne pepper, and nutmeg. Mix well.
- In another bowl mix together the chickpeas, olive oil, and honey. Making sure the chickpeas are evenly coated with the olive oil and honey.
- Stir in the spice mix. Mix until the chickpeas are evenly coated with the spices.
- Pour the chickpeas onto a tin foil covered baking sheet. Spread the chickpeas out so they are evenly distributed.
- Bake the chickpeas in a 400 degree F oven for 20 minutes.
- Remove from the oven and use a wooden spoon to stir the chickpeas and redistribute across the pan.
- Bake for an additional 10-15 minutes, until the chickpeas are crunchy. Watch the chickpeas carefully to make sure they don't burn.
- Remove from the oven and enjoy!
