So it’s finally here…February. What does that mean you ask? Well…it means it’s the coldest month of the year. In Connecticut…it means that as I am writing this we are getting 8 inches of snow and in a couple of hours I will have to go outside and dig out my car. It also means the fun sporting events like the Super Bowl and the 2014 Winter Olympics. There is one other thing February means…Valentines Day!
Now for me I could take or leave all the romantic stuff about Valentines Day. Don’t get me wrong, that stuff is great. But at the end of the day, isn’t the best part the food??? Breakfast in bed, lots of chocolate, fancy dinners…it is a food lovers dream.
Sunchoke Soup
But seriously, if you have never seen a Sunchoke its appearance may confuse you. It sort of looks like a large funky piece of ginger. Even more confusing it is also known as a Jerusalem Artichoke….but it looks nothing like an artichoke and is not from Jerusalem….so there you go. Since I was unfamiliar with this particular vegetable I did a little research before I set out to cook. They have a taste and consistency tat is similar to potatoes…SO I decided to make a soup. It was good! I added a little Spinach Pesto on the side for a garnish, which, when mixed in, gives the soup a wonderful something extra. If you are new to Sunchokes….this soup is an excellent introduction!
Red Lentil Coconut Curry
Today I decided to try my hand at a simple curry. I don’t know about you but I am a curry addict. I like all kinds. Spicy. Sweet. Mild. Red. Green. You name it I will eat it. However, most of my favorite curries usually involve coconut milk. it adds such a delightfully creamy texture to the dish while providing a depth of flavor and sweetness that is to die for. Today I decided to indulge my love of coconut curries and make a wonderful mild red lentil curry. I threw in some fresh local kale and organic sweet onions…and I must admit it was delicious! Chicken BLT Wrap
I am always searching for new and tasty things to make for lunch. I pack my daughter a lunch for school and often feel like I get in a rut with ingredients. She loves anything in a tortilla. Whole wheat tortillas have such a great flavor. We have grown to love them even more than the traditional ones. So I’ve been trying to find new things to wrap! This is one of my first tries. Spicy Chipotle Bean Dip
Since New Year’s Eve is all about parties, I thought I would show give you an easy and delicious party dip. And I mean….who doesn’t love dip? It really is the perfect party food. It is easy to eat, fun, and great for a crowd. Here is a simple and quick version of white bean dip.This bean dip gets a Southwest twist with the addition of chipotle peppers, chili powder, and even a pinch of cayenne. It is easy to make and ready in less than 10 minutes. I soaked and cooked the white bean myself, but if you prefer you could use a low sodium canned variety. I also toasted a little whole wheat bread to serve the dip, but tortilla chips or pits would work great also!
