Local Cows, Local Place, Local Beer…yum

If you read our blog regularly, you know that I live in a small-ish town in central Virginia. We are about 30 miles from Charlottesville, with a mountain in between, which makes it seem like 100 miles. The best thing about the area where I live is the availability of local farm goods like; produce, diary, meat, eggs, and poultry.

Green Olive Hummus

I didn’t realize how much I loved green olives until I made this hummus. Mario Specialty Food sent us some olives and asked us to help them create some healthy recipes. Originally I thought I’d make a tapinade, but decided to go with a hummus instead. I’m so glad I did. The green olives simply extend the olive oil flavor in the hummus and it so so yummy.

Sunchoke Soup

But seriously, if you have never seen a Sunchoke its appearance may confuse you. It sort of looks like a large funky piece of ginger. Even more confusing it is also known as a Jerusalem Artichoke….but it looks nothing like an artichoke and is not from Jerusalem….so there you go. Since I was unfamiliar with this particular vegetable I did a little research before I set out to cook. They have a taste and consistency tat is similar to potatoes…SO I decided to make a soup. It was good! I added a little Spinach Pesto on the side for a garnish, which, when mixed in, gives the soup a wonderful something extra. If you are new to Sunchokes….this soup is an excellent introduction!

Red Lentil Coconut Curry

Today I decided to try my hand at a simple curry. I don’t know about you but I am a curry addict. I like all kinds. Spicy. Sweet. Mild. Red. Green. You name it I will eat it. However, most of my favorite curries usually involve coconut milk. it adds such a delightfully creamy texture to the dish while providing a depth of flavor and sweetness that is to die for. Today I decided to indulge my love of coconut curries and make a wonderful mild red lentil curry. I threw in some fresh local kale and organic sweet onions…and I must admit it was delicious! Exactly what I needed to cheer me up on this cold dreary day.
