Chicken BLT Wrap
I am always searching for new and tasty things to make for lunch. I pack my daughter a lunch for school and often feel like I get in a rut with ingredients. She loves anything in a tortilla. Whole wheat tortillas have such a great flavor. We have grown to love them even more than the traditional ones. So I’ve been trying to find new things to wrap! This is one of my first tries. It’s a BLT Chicken wrap, because who doesn’t love bacon?

Since New Year’s Eve is all about parties, I thought I would show give you an easy and delicious party dip. And I mean….who doesn’t love dip? It really is the perfect party food. It is easy to eat, fun, and great for a crowd. Here is a simple and quick version of white bean dip.This bean dip gets a Southwest twist with the addition of chipotle peppers, chili powder, and even a pinch of cayenne. It is easy to make and ready in less than 10 minutes. I soaked and cooked the white bean myself, but if you prefer you could use a low sodium canned variety. I also toasted a little whole wheat bread to serve the dip, but tortilla chips or pits would work great also!
Heirloom Yellow Eyed Peas – A “New” New Year’s Day Tradition
The last few years my family has started out the new year by eating black eyed peas. I found these beautiful yellow eyed peas at the farm market. The owner says they are in the same family but have a smoother taste and greater depth of flavor. They are considered an heirloom bean. You may know that black eyed peas are often served on New Year’s Day because its thought they bring good luck. However, yellow eyed peas are thought to bring not just luck, but luck in the form of GOLD. So, I am going with it! ‘Cause I could really use some gold right about now!
