I don’t know about you, but I love anything resembling a casserole. If there is something warm, baked and savory…i’m in! I am starting to love quinoa. It is so easy to cook, can be flavored with anything…and to top it off its really healthy! So I wanted to find a way to mix my love of quinoa and casseroles together in one amazing dish. and the result…..Spinach Quinoa Pie!

Creamy Spaghetti Squash Mac’n Cheese
I wanted to make a mac’n cheese dish that had all the satisfying creaminess without all the “bad stuff” of the traditional version. I made it with spaghetti squash instead of pasta and added Greek yogurt instead of butter. The result…an amazingly delicious dish that was exactly what i wanted on this dreary day.

Isn’t nature funny. I mean…a squash that cooks like spaghetti?!?! It’s almost like nature knew that one day we would need a great way to replace all that unhealthy pasta we have been eating.
