Tomato Basil Scramble

This is a quick and easy breakfast for a busy morning. It’s absolutely scrumptious. The fresh basil is a tasty surprise paired with the tangy tomato. This could also be the perfect breakfast for Christmas morning. You can even make it quick before the kids start tearing into their presents.

Clean Eating Pumpkin Pie and Pie Crust

So, the local farm market has so many pumpkins they are basically giving them away. I purchased 10 sugar pie pumpkins, locally grown for $4! Yep, you read that right, $4. They are 2 for $4 at the big chain grocery store. And, these are organic and grown locally. It really doesn’t get any better….

Apple Cinnamon Bread

I have to admit it surprised me how good this bread is! And this is coming from someone who has admitted on many occasions that I don’t like cooked apples (I know!). I used my homemade applesauce, which is made with local Fuji apples. I also used local whole wheat flour which I bought at the farmers market and some local honey. The Greek yogurt gives it an amazing texture and the flavor is out of this world. Once you try this bread you will be addicted. I am on my third loaf already!

Roasted Butternut Squash Soup

I don’t know about you, but to me this weather just calls for soup. And in an attempt to further immerse myself in the fall spirit, I decided to make a Roasted Butternut Squash Soup. It was delicious. I started out by roasting the butternut squash, which gave it an extra depth of flavor. In addition, I added a couple of pinches of cayenne pepper, giving it just a little kick and cutting the sweet. For my local ingredient I used fresh picked Fuji Apples, which we picked ourselves on a local farm. The soup was amazing! Creamy, flavorful, with just the perfect amount of spice.

Decadently Dark Chocolate Dipped Apples

So..if you saw Sunday’s post about our little fall outing you will understand why today we are making chocolate dipped apples. In hindsight….we may have gone a little overboard on the apple picking. But who wouldn’t…picking apples is soo much fun, it’s easy to forget that you actually are going to need to figure out something to do with them after! So I apologize in advance if we post a few apple recipes this week. But we have to do something with them I guess! Luckily we all like apples, a lot.

Black Bean and Tomato Quinoa

I’m a huge fan of nutty grainy flavor so I was excited to experiment with quinoa. I thought the flavor of the quinoa would go well with some chili kinds of flavors, and I was right. Pumpkin Chocolate Chip Cookies

Lately it seems like everyone is doing some sort of pumpkin dessert. (I mean obviously right, it is October). But it seems like this year we are going more pumpkin crazy than usual. One thing that seems to be the latest craze is pumpkin cookies. So I though, why not, join in the fray and try to make my own! These cookies are great. So fluffy! And just the right amount of sweet. Oh…and did I mention they have chocolate!

Whole Wheat Oatmeal Banana Pancakes

Pancakes are a weekend ritual at our house. My daughter and I love to cook together and pancakes are the perfect recipe for little hands to help with. She puts on her apron and gets up on her cooking stool. Her favorite part is mashing the bananas for me. We’ve been taste testing a whole wheat oatmeal pancake recipe for weeks now and finally perfected it this weekend. My daughter loved them, in fact, she ate 4 pancakes throughout the morning. That’s a lot for a little tummy.

Roasted Acorn Squash

Spinach Quinoa Pie

I don’t know about you, but I love anything resembling a casserole. If there is something warm, baked and savory…i’m in! I am starting to love quinoa. It is so easy to cook, can be flavored with anything…and to top it off its really healthy! So I wanted to find a way to mix my love of quinoa and casseroles together in one amazing dish. and the result…..Spinach Quinoa Pie!
