My First “Clean” Vacation

So, today I’m Bermuda bound! Needless to say, I’m a little excited. It’s been a LONG time since I’ve been on a real vacation. We are going on a cruise. Cruises are notorious for over indulgence of food. I have worked so hard in the past few months to “clean” up my diet and I’m going to try to stay committed to keeping that up. Of course I’ll allow myself a few cheat items. Our “My Clean Kitchen” philosophy is 80-20, so I’ll let myself indulge, but only 20% of the time. So I thought I would share with you the preparation I’ve done in hopes of keeping myself on track while I’m sailing the high seas.

Spinach Pesto

I am a pesto addict. I think it might be the perfect sauce. it has everything a great sauce should…nuts, cheese, herbs, and pretty colors. For the longest time I only ever made traditional pesto, but recently I have decided to branch out! Here is one of my newest addictions…Spinach Pesto! It is delicious! And a great way to use up that extra spinach in our fridge. Trust me, once you try it, you will be a convert as well!!!

So..if you saw Sunday’s post about our little fall outing you will understand why today we are making chocolate dipped apples. In hindsight….we may have gone a little overboard on the apple picking. But who wouldn’t…picking apples is soo much fun, it’s easy to forget that you actually are going to need to figure out something to do with them after! Fantastic Fall – Farmers Market, Apple Picking, and Fun!

I’m a huge fan of nutty grainy flavor so I was excited to experiment with quinoa. I thought the flavor of the quinoa would go well with some chili kinds of flavors, and I was right. Pumpkin Chocolate Chip Cookies

Lately it seems like everyone is doing some sort of pumpkin dessert. (I mean obviously right, it is October). But it seems like this year we are going more pumpkin crazy than usual. One thing that seems to be the latest craze is pumpkin cookies. So I though, why not, join in the fray and try to make my own! These cookies are great. So fluffy! And just the right amount of sweet. Whole Wheat Oatmeal Banana Pancakes

Pancakes are a weekend ritual at our house. My daughter and I love to cook together and pancakes are the perfect recipe for little hands to help with. She puts on her apron and gets up on her cooking stool. Her favorite part is mashing the bananas for me. We’ve been taste testing a whole wheat oatmeal pancake recipe for weeks now and finally perfected it this weekend. My daughter loved them, in fact, she ate 4 pancakes throughout the morning. That’s a lot for a little tummy.

Roasted Acorn Squash

Hey, it’s Jessica again. I am still in Georgia this week visiting family. And there is one thing I have to say…it is definitely fall. Like actual fall…which is unusual this time of year in GA. The weather said it was going to get in the 20s this weekend…I mean what is that…it’s the south…that kind of stuff is not supposed to happen in Georgia. Anyway, I digress.
