Rosemary Chipotle Roasted Almonds

I usually do a food gift for the neighbors and friends in town. In the past I’ve made candied pecans. But, this year I did a cleaned up version of the “nut” gift. The rosemary and chipotle flavors marry so well with the maple syrup. These almonds are so yummy, I had to force myself to stop eating them so I had enough to package up for gifts. I’ll be making a few more clean eating food gifts this week.

Simple Caprese Appetizers

Today I made Simple Caprese Appetizers. I used fresh mozzarella, cherry tomatoes, basil, and threw in a little prosciutto for a fun twist. All I did was sprinkle them with salt and pepper and drizzle them with a little balsamic vinegar and they are good to go! Simple, Easy, Delicious!!!

Almond Butter Buckeyes

My clean version of the traditional buckeye candy is delicious. I replace the peanut butter with creamy almond butter, which is divine. To make it even better I dip the almond butter balls in dark chocolate, that has just the hint of coconut. These little balls of almondy, yummy, chocolaty joy are amazing. Trust me…one taste, and you will never go back to the originals!

Clean Eating Holiday Gift Essentials

I don’t know about you but my wish list is full of kitchen goodies this year. I want an herb saver, an herb mill, and possibly a new kick-butt blender, just to name a few. We will see if Santa decides whether or not I’ve been nice enough this year. Jessica and I have been talking a lot lately about our favorite kitchen items and ones we WISH we had! So we decided to compile a list of our 10 Most Wanted!

We have some must have items here that are under $20 and then we have our splurge items. But, I must say we love them all equally! Anyone who loves to cook wants and needs this stuff. Get your shopping done early!

Slow Cooker Turkey Chili

This year I opted to make turkey chili. For one reason, because it is easy. I just dumped a bunch of stuff in the slow cooker and went back to watching movies on the couch. Another reason I made chili is I knew it would freeze well. It turned out to be exactly what I wanted. The leftover turkey worked perfectly. The chili powder and cayenne gave it just the right amount of heat without being overpowering. It was warm and satisfying and exactly what I wanted on this cold day. I hope you enjoy it as much as I did!

Creamed Spinach and Kale

My cleaned up creamed spinach recipe uses cream cheese and cream to achieve that perfect creamy texture we all love. In addition, I threw in a little kale to give it a fun tasty (and nutritious, but don’t hold that against me) twist!. I have to tell you guys…this stuff is so good. Like unexpectedly good. I ate half the dish without even realizing. It is everything you want in a creamed spinach, without all the stuff you don’t. After you try this, I promise, you will never go back to the old version again!
