Almond Butter Buckeyes
My clean version of the traditional buckeye candy is delicious. I replace the peanut butter with creamy almond butter, which is divine. To make it even better I dip the almond butter balls in dark chocolate, that has just the hint of coconut. These little balls of almondy, yummy, chocolaty joy are amazing. Trust me…one taste, and you will never go back to the originals!
Slow Cooker Turkey Chili
This year I opted to make turkey chili. For one reason, because it is easy. I just dumped a bunch of stuff in the slow cooker and went back to watching movies on the couch. Another reason I made chili is I knew it would freeze well. It turned out to be exactly what I wanted. The leftover turkey worked perfectly. The chili powder and cayenne gave it just the right amount of heat without being overpowering. It was warm and satisfying and exactly what I wanted on this cold day. Pumpkin Butter – Easy, Simple Thanksgiving Treat
I’ve been trying to figure out what to bring to my in-laws for Thanksgiving. Jessica and I discussed a couple of options and came to the Pumpkin Butter idea! It worked out perfectly because the local Farm Market had these amazing Heirloom Pumpkins that were grown locally. The seeds originated in Italy many many years ago. I assume they were brought over by an immigrant. They look nothing like pumpkins the but inside is a beautiful, dark orange and made a beautiful Pumpkin Butter.
Cranberry Apple Chutney & Traditional Cranberry Sauce
So, continuing on my Thanksgiving theme this week, I made this Cranberry Apple Chutney. I think we may have finally finished up our apples! We had SO many though. There may be a few still hiding in my fridge. I’ll scope it out in the morning. I hope not though because that would mean time for more apple picking!
